At long last the much anticipated Episode 3 of The Dairy Show is here. This full episode features Rainbeau Ridge and Blue Hill at Stone Barns.
Rainbeau Ridge is a very special and unusual farm, because it is located in the suburban neighborhood of Bedford Hills New York. On this small piece of land owner, farmer, and cheese maker Lisa Schwartz has created an award winning farmstead cheese operation, an education center, an organic vegetable garden, and a farm store. In her free time, Lisa managed to write a book about the experience. Lisa makes goat's milk cheeses from the spring to early fall when the goats are in milk. Her cheese are very flavorful and yet mild and liked even by people who don't like goat cheese. The cheese is sold to a host of local markets and prized by local chefs. In this episode we'll go onto the farm and into Lisa's cheese house where she will show us how she creates her amazing cheeses.
From the farm we will travel 12 miles south to the famous farm to table restaurant Blue Hill at Stone Barns. There Chef de Cuisine Josh Lawler will show us how they use Lisa's cheese to create the most beautiful and delicious salad you've ever seen.
Along the way we'll stop and talk about the science behind the flavor of goat's milk cheeses and we'll finish up with some words from Blue Hills co-owner and executive chef Dan Barber.
